Executive Chef Jeffrey Trujillo, a
native Long Islander, has cooked from Texas to NYC to Eastern Long Island
during his career spanning four decades. He has worked for many of the luminaries of the
culinary world including; Daniel Boulud, Craig Claiborne, Julie Sahni and
Alain Ducasse among others.
Obtaining the best and freshest of everything comes naturally to Jeff. He
was a pioneer in the area's fresh and organic
agriculture movement years before it became trendy. In addition to his responsibilities at Dark Horse, Jeff is an instructor in the Culinary Arts Programs of Suffolk
Community College. He has also served as a board member of the American
Culinary Federation.
Being at the
forefront is not
unusual for Jeff. Dating back to his beginnings at the Culinary Institute
of America, Jeff was chosen by his peers to be group leader four semesters
running and was the natural choice to give the commencement address at
graduation. Jeff understands that there is always more to learn. He has
returned to the CIA for specialized post graduate training in baking,
desserts and cake decorating. Jeff's passion for learning is contagious in
his teaching style. Many of his students have become acclaimed chefs
themselves, and several have gone on to own their own business.
